Spicy Banh Mi Recipe

This was incredible. I used some baked asian tofu I had on hand and since I didn't have any daikon radish I just used extra carrots. SO YUMMY!

Vegetarian Pho | The Veg Blog

After a facebook friend mentioned eating Pho I decided to find a vegetarian version. yes, I know pho lovers will scoff since, by definition, pho can't really be vegetarian but phooey on you all cuz this looks amazing.

Easy Vegan Wheat Bread

Just made this. Used honey instead of molasses, added 1/2 c. milled flax and used 50/50 flour. yummm.... I love fresh baked bread almost more than anything.

Iced Oatmeal Cookies

*update: these are delicious. the lemon icing is an unexpected and wonderful compliment. If you're expecting conventional oatmeal raisin cookies though, you'll be disappointed. These are their own entity alltogether.

 

I have these chilling for the painful required 2 hours. I have 1 hour left before I can bake them.

Quinoa and Black Beans - All Recipes

one of my favorite dishes. I add bell pepper in with the onion and some canned tomatoes and salsa verde with the quinoa. It's delicious and very healthy. *ADDED NOTE: I forgot to mention that I only use 1 can of black beans. It's too "beany" for me otherwise.

Absolutely Fabulous Greek/House Dressing Pasta salad

I used this amazing dressing I recently discovered to make greek pasta salad. I used it to dress whole wheat penne, cucumbers, tomatoes, kalamata olives, feta and artichoke hearts. Delish. And the whole wheat pasta is so filling it was definitely filling enough for a dinner entree.

Apple Crisp II - All Recipes

I made this tonight but didn't have enough apples (I was craving apple crisp for some reason) so I added plums...and I'm not sure what I'm missing here, but there is no way you need 10 cups. I used 3 apples and 3 plums and I sliced the plums a bit thicker than the apples and kept the skin on.

I also used sugar substitute and smart balance to keep it a little lower cal.

I'm eating it now with a little vanilla ice cream and it's just what the doctor ordered for another night without my lovely husband (who has been gone most evenings for play rehearsal - tonight marks the official opening night which includes a special meet and greet cocktail hour with the audience after)
