spiced coffee

From the December 2011 issue of Health Magazine

Goes perfectly with these scones http://www.recipegirl.com/2011/10/27/starbucks-pumpkin-scones/ which can easily be made vegan by making the appropriate substitutions (I use coconut milk instead of the cream)

* Serves 4-6
** mix 10 T ground coffee with 1 t cinnamon and 1/4 t nutmeg in coffee filter
brew with 6 cups water

in a glass measuring cup
mix 1/2c milk (I used 1/4 cup coconut milk "egg"nog and 1/4 cup rice milk) with 3 T agave nectar and 1/8 t unsweetened cocoa powder
heat

pour coffee into your favorite mug leaving room for the sweet mixture
add the milk to taste

* If you have 6 people who want a small serving of coffee with a small amount of sweet milk, this will serve all 6.  In the case of my husband and me, it made a large to go cup for him with a splash of milk and 2 large mugs for me with lots of milk. I think a 4-person serving is probably more realistic.

**if you crunched up a cinnamon stick course and grated a whole nutmeg, you could adapt this for a french press.

Potato and Cauliflower Burritos

Media_http2bpblogspot_hhzar

This was dinner tonight. I had a giant salad while waiting for David to get up from his "second sleep" before an all nighter on set so I only had a taste but what I tasted was SO YUMMY and David said it was really good; and he doesn't generally like cauliflower very much so don't let it throw you off. This is a winner. I used 2 potatoes because they were medium sized yukons and I think the ratio was perfect. I also can't stand cilantro and always leave it out of every recipe. I also think you certainly COULD use something else in place of the chipotle in adobo but you're going to get a TOTALLY DIFFERENT taste. The smokyness really makes this recipe in my opinion.

wonderful new menu planning discovery

Meal Planning Website

I have just discovered this and it's AWESOME! You can add staple items to a master list. You can import recipes from just about any site and those that won't import, you can easily add manually by copying and pasting into the right sections. You can plan menus for every meal and then put together the shopping list. It's the best of every other similar program I've used all rolled into one site.

My user name is makeesha, if you join, add me as a friend so we can share recipes.
